The best coffee is undoubtedly fresh coffee. Coffee is a foodstuff and like any foodstuff this deteriorates with age. Yes, it’s not an immediate decline, coffee beans certainly hold there own for a month or two but the decline is slow and steady. Perhaps the flavour deteriorates by a percentage each week, this means that after ten weeks, you are only getting 90% of the flavour. Ground coffee is even quicker unless this is vacuum packed, even so, this should be used as soon as possible after opening.
